I wouldn't worry about going mega wide, 235/85R16 will be just fine.
I run 750/16 XZL (narrow, aggressive, mud pattern) and they have been fine in sand... Tyre pressure is the key. ;)
I also run mine on steel rims but I use 130 & wolf rims. Both 130 & Wolf rims are 6.5" and much stronger than the regular Defender rims (Wolf rims being stronger than the 130 rims).

Ive got the original steel rims on my 1996 110 wagon. They are definitely 5 1/2" wide. I looked into getting 235/85s instead of the 7.5R16s but the tyre guy said no, 235s (or the vast majority at least) require 6" rims and he was prevented by law from fitting them.
I'm not saying they won't fit but they aren't legal. something to bear in mind vis a vis insurance claims

First I've heard of it. I've run Hankook MTs since 04, and I'm about to swap to a BFG KM2 - all of them in a 235/85 R16. That's in a 93 200tdi Defender.
