A 5" lift is a fairly aggressive lift. As others have asked what components are you using for the lift and drive line re-alignment? How it handles with the lift, body roll etc. Will also be very interested in the roadworthy inspection and lane change test results as it is over the allowable 50mm / 2" max lift.
Will be interesting on a good cross slope :) I've been on a couple of cross slopes that were sketchy without any lift and using standard sized wheels.
Running an offset rim can help with stability due to wider wheel track, however a 5 " lift is quite high for a defender

This is one which was in our club. A great vehicle that showed that you can have big tyres, lift and stability. Incredible where it would go.
