I always thought that the Defender Aircon was crap. Maybe mine was playing up. It is very nice in the Discovery.
The aircon on our 90 dropped out in the first week. We took it back to the dealer and it needed to be re-gassed as a hose hadn't been connected properly.

Mine is fine on short trips, but it froze up on a long one. I will mention it at the next service for sure.

This sounds exactly the same issue that vr commodore/statesman had. If small leaves fell onto windscreen they would build up at aircon intake stuffing it eventually.
We had a 94 Vr statesman and the local aircon guy did exactly what your suggesting deesse , basically cut a hole under dash to access to turn a 2 day factory/dealer remove dash job into a 3 hr job. Once glued back in you couldn't see unless your about 6 inches away with your head on the floor.
If you figure out how ,post a vid ,as with the number of Pumas this will be a common issue everywhere warm. If it's tight you could make a template to supply/sell online.
As someone already wrote several posts back. There is a known issue and a field action. The sensor on the evap is either faulty (replacement part is listed on topix), or not mounted properly on the evap, or both, such that the evap does freeze and lose efficiency on a long drive.
LR Malaysia had two goes to get mine right under warranty. It's a couple of days in the workshop as it is a whole dash out operation.

Are the modern air-conditioning units like the older ones where if put to full on it disabled the defrost cycle?

My 2013 has been doing this since new. I can manage it by just switching off the A/C until it blows warmer (which can take quite a few minutes) , then put it back on. It ices up slower if you have the fan on maximum as it does not let the condenser get as cold. Also better if you keep it on recirc as it does not draw humid air from the outside in and this also reduces the amount of ice formed.
I'm almost tempted to not bother getting fixed as from what I experienced on my last Puma, the repair caused more issues than was fixed, it's a big job and they will break something.
