Well, swapped out the ECU for a Disco unit with the same mild mapping and all the performance issues appear to be gone. Only problem now is the temp gauge seems to have reverse polarity.
Have a look at the turbo wastegate.
disconnect the actuator rod and see if the wastegate opens/shuts smoothly.

Sounds like the ECU has failed.
The capacitors can fail in the ECU and it usually starts out as the surging/ misfiring symptoms that you have described until a total no go.
So you were quite lucky not to be stranded somewhere.
Nanocom diagnostics will show this up as a 'topside switch fault'.
I carry a pre programmed spare ECU with me on remote trips just for this potential issue.

If you were about to part with some hard earned it would be very worthwhile to throw some in the direction of a nanocom which would be at the top of my list for remote travel
You would then have been able to have diagnosed the problem when it first arose. As Harro mentioned it would have probably shown a topside switch fault
The reason no-one guessed it is because , aside from oil or water ingress they are a very robust ecu and these issues are rare.

The independent guy I have been going to for almost 30 years now was unable to get any meaningful data out of it on a number of occasions over the past four or five years. Anyway I have loan ECU at present and will be replacing with another one next week so I can return the loaner.
So not sure a Nancom would have provided anything he couldn’t see but as I have three defenders it may well be worth the investment. :-)

Just an update here for anyone interested. Both the loan ecu and the second hand replacement one were throwing errors that the old one was not. So a temperature sensor was replaced. Running very well now.
My mechanic had found a suitable second hand ecu from a well know Adelaide wreaker and was quoted $1600 but when he went to order it the following day the price had gone up $300. He has been buying gear off tbese guys for a long time and this is a recent trend. He told them he no longer wished to do business with them, but might have used different words!
Anyway he found another suitable unit from KLR for $600.
Pays to shop around and mind you are not being taken for a ride.

A common issue is the replacement ECU is from a Discovery 2 auto, hence all the errors.
Also a Discovery 2 ECU will make a Defender temp gauge work the other way round.
Also was the original ECU opened up to see if it was full of oil? which would also account for the replacements made it run ok, as in they arent full of oil yet.

The loan ECU was from a manual Disco while they sourced a Defender one. So now has a proper Defender ECU. What I was trying to say was the original ECU was not showing any errors where as the Disco loaner and the replacement Defender units showed the same error which resulted in the sensor being replaced and all good now. All the sluggishness gone.
I have no idea if they opened the old unit. They did tell me this is only the third Td5 ECU they have ever had problems with and the other two were completely dead. Without saying their name I have been getting my vehicles, Defenders and earlier RRC’s serviced here for almost 30 years and I tend to believe what they tell me. I will ask them about the oil issue though :-)

I think $600 is a bit steep as well. You can use a NNN ECU for around the $400 -450 mark.
