The LS3s had a lot more low end torque than the LS1s. I doubt you'd find it wanting. Happiest on PULP, though due to the aggressive compression and spark limited tuning. Quite happy on E10, very much designed for it. Will give away noticeable torque and driveability on standard ULP, but it'll still be strong.

I can assure the O.P. that He's not going to have problems with any aspects of the LS3, particularly with a matched 6 speed. He's going to have masses of power & torque wherever He needs it,..that is one of the main attributes of the LS3, a big cube, lazy, V8,....I'd suggest very rarely will its capabilities be fully utilized.
Hopefully the conversion will include a nice set of pipes so that another "benefit", that "V8 noise", will be forthcoming.

Are you going to fit a set of headers, or simply use the standard manifolds which I reckon will probably be fine for your purpose.
I reckon a single big bore will be fine, I'm sure Andrew will be able to advise on the correct muffler so that the glorious sound of the LS3 working hard will not be lost.
