So where are people mounting their fridges? Anybody removing a rear seat and mount behind driver seat accessing through door?

I fold the rear seat behind the driver down and strap the fridge in there. Access thru the window or door.

as do I, works well on 7-seaters with the 3-way split third row.

Got the Engel Fridge in the same spot - works quite well only while driving a bit difficult

Fridge in the std spot - rear drivers side load area.
2 billy lids sit in the rear seat, so never considered any other option.

I've got mine on the driver's side in the cargo area. It's a 60lt Waeco and sits quite high. I've got it on a fridge slide (Engel from a previous vehicle) which I've mounted to a ply base which in turn is strapped down using the cargo hooks.
With this type of arrangement I can side fit longer important items (like golf clubs :D) by folding down the rear passenger seat.
I've got a Traxside second battery sitting between the fridge and the rear seat and the whole things is just perfect. Traxside system is grouse!
To access the fridge I open the rear doors and slide her out. I can then easily lift the lid and peer in to see what I want to get out... although over the years I crafted the ability to feel for cold cans with my eyes shut! ;)
For me personally I wouldn't like to access the fridge from the driver's side door(s) because quite often you'd be standing in the street to do this - I reckon this is a tad dangerous. I've always been a backdoor man (oops, might need to rephrase this!) as I reckon it's safer and usually more convenient for those refills from the supermarket while on a trip. The other reason I like the cargo area approach is that you have the fold down door at the rear which acts as a great sorting platform for shopping items prior to loading in the fridge.
I'm a bit busy work wise but I'll take a few pictures and post them soon.
Regards,
Ron
