I'm looking to a buy a Disco 2 with a TD5 and leather interior. Is there a particular model/trim name that would denote this, e.g. with Falcons the top of the line is called Fairmont Ghia, or with a Commodore it is a Calais?

In the early models 99MY - 02MY the model was depicted "ES".
These were only available in AUS & were top spec, easily identified by captains chairs (fold down arm extensions)in the front & electric seats.
From 03MY (or D2a) they were called the "SE" & "HSE" variants again with captains chairs & with elecric seats.
The 03MY also had a vehicle with Leather seats & was called the "Plantinum".
From memory was only available in Black or Silver & easily identifiable by the Factory Alpine head unit & Front/Rear head light grills, exhaust extensions & "Platinum" on the wheel cover.
On the sell out to get rid of the model before the release of the D3, they introduced the "Classic-Town" model with had factory leather, no captains chairs & manual adjust. These were only available in the 04MY.
HTH.

Sniegy is spot on with the "Classic Town" model.
I have a pristine 1 in my driveway right now that is getting some TLC after a light front end fender-bender!

So if it's leather with the captains chair (fold down armrests) then it's an SE or HSE. The lower models with leather don't have the fold down armrests? So, even if the model is an SE, does that still mean that leather wasn't necessarily standard, i.e., was leather optional on the SE models too?
I reckon I'll be looking at a Discovery Series 2. Around the 2000 mark. Would like one already fitted with a bullbar, snorkel, side steps etc. to save me having to purchase them afterwards!
