Well , having a family bbq tomorrow, and our 2nd son's fiance works for the RSPCA. Part of her work involves bringing home abused animals, and nurturing them until a place can be found for them in the system. Tomorrow, we will have as guests, a sheep and a goat. Can't wait to hear the background to this one, life can be very interesting around here at times, Bob

Don't spend hours in the kitchen today - you can have this gorgeous rack of lamb with crispy potatoes on the table in less than an hour!
Ingredients (serves 4)
3 garlic cloves, crushed
1/4 cup (60ml) olive oil
2 tbs chopped rosemary leaves
1 lemon, sliced
4 x 4-cutlet lamb racks
10 chat potatoes
150g vine-ripened cherry tomatoes
1 cup (160g) pitted kalamata olives
Good-quality mint sauce, to serve (optional)
https://www.aulro.com/afvb/images/imported/2011/11/925.jpg
Method
Combine garlic with 2 tablespoons of the oil, rosemary and lemon in a bowl. Add lamb, season with salt and pepper, and toss to coat. Marinate for 15 minutes.
Preheat the oven to 180°C.
Meanwhile, part-cook the potatoes in a pan of boiling salted water for 5-6 minutes, then drain.
Flatten each potato with a potato masher and place in an oiled roasting pan. Drizzle with remaining 1 tablespoon of olive oil and season well. Roast in the oven for 15 minutes or until golden.
Meanwhile, heat a large frypan over medium-high heat. Sear the lamb on all sides. Place lamb and any pan juices on top of the potatoes with lemon slices and roast for 10 minutes (for medium-rare, or until cooked to your liking). Remove lamb, cover loosely with foil and rest for 5 minutes. Add tomatoes and olives to the potatoes, then return pan to the oven for a further 5 minutes until tomatoes soften. Serve the lamb on the potato mixture, with mint sauce if desired.

When we lived in central Qld on properties my dad managed, he used to take me down when he butchered the "killer" for our meat. Think I know how to do it, , just have to distract the future daughter in law. do remember the balls, or sweet meat, I think it's called, go to the dogs. I have a Greek mate, will have to consult him on the matter. Bob

Don't give those to the dog they are the best parts!!
The old timers didn't waste a thing, black pudding, the intestines for sausage cases, even the bones and hooves were rendered down for their gelatine.

No, she has to go to work after the bbq, and take the sheep @ goat with her. The staff at the RSPCA here are very hands on with the animals in their care, sometimes the sons place looks like a zoo, with all sorts of critters in rehab..Bob

:D Good one, bit slow since I came to the big smoke. Got the heads up on the critters, they are not long out in the world, the lamb was one of twins, the mother rejected it, the goat was found on the side of the road in northern NSW, picked up by a driver , dropped off in Brisbane, fair dinkum, this future daughter in- law of ours has a heart as big as Caviar's, she tells me she has almost caused a couple of accidents with the critters in the back of her Rav4 looking out the window , and drivers losing concentration. BTW, only daughter bought her new boyfriend along, turned out to be a good young bloke, truck mechanic, army reservist, and the clincher, rocked up with a 30 pack of beer under his arm.I told him he has gained major brownie points, I think this could be serious, Bob

Then he lost the newly gained brownie points by drinking the lot;);););)

Tell the RSPCA that the sheep had a heart attack when the goat told him that she doesn't love him anymore
You could use 2 pounds or 1 kilo of meat preferably from the neck to prepare a nice kebab.
2 tablespoon olive oil
1 cup onions chopped fine
1 cup parsley fresh chopped
2 teaspoon salt
1 teaspoon ground pepper
Fine mince the meat https://www.aulro.com/afvb/images/imported/2011/11/869.jpg
The parsley should be chopped as such
https://www.aulro.com/afvb/images/imported/2011/11/870.jpg
Mix all the ingredients together.
You can BBQ the mix either by threading it on skewers or by giving it the burger patty form.
I prefer using a grill over the BBQ because if the salt is not enough the meat will fall off the skewers.
The Kofta should look like this once grilled.

We usually have Hoummos with it. If you're interested do not hesitate I can give the recipe.
Don't forget to have some ARAK with it. Arak (drink) - Wikipedia, the free encyclopedia (http://en.wikipedia.org/wiki/Arak_(drink))
Enjoy
