anyone got some ideas on what pressure is running through those lines.

I bought a davis craig oil cooler which came with a length of 3/8 60 BAR (870-ish psi) hose. I can get any 3/8 hose close to that rating from the normal haunts.. closest was repco with 400psi GATES hose. would this do?

There are plenty of hydraulic hoses that will take much more than that in pressure. See your locaql Piurtek or Enzed man
Depending on the maximum working pressure of your system I would look at securing the hose with better than clamps, once again consult your local Pirtek or Enzed man.

Blimey. You're sure it's 60 bar? Is it wire armoured? 6.0 bar would be more likely. No manual trans will generate more than a couple of bar, only hydraulic pumps are that high pressure. If in doubt fit a tee and pressure gauge, see for yourself. Hose clamps will be fine. Air cond hoses go to 20 bar and used hose clamps in the past.
