I have recently purchased a 97 V8 auto Disco. Brilliant car but it has a strange issue of cutting out when you just come off throttle when slowly going up an incline, such as our driveway. On throttle- no worries, off throttle sometimes it cuts out, not always. Happens going forward or reverse.

The throttle butterfly and the idle air control (IAC) stepper motor are probably dirty and in need of cleaning. Buy a spray can of contact cleaner or throttle body cleaner, remove the IAC from the drivers side rear corner of the inlet plenum chamber, carefully spray it (and its housing) clean. Do not under any circumstances force the IAC spindle.
You can also raise the base idle speed a bit. You need to insert a 3/16" allen key in the raised hole right on top of the throttle body, unscrew the adjuster inside approx 1 turn and see how the idle goes. This adjuster sets the minimum speed the engine can idle at when warm.

Had an issue very similar a couple of years ago started out the same as you and it worsened to the point any hill it would stutter and cut out. I found that a previous owner had fitted a fuel pump that was shorter and fatter than the correct one and had butchered the electrical and fuel connections to make it fit. Changing the pump improved performance up hills at speed but still had low speed stuttering up inclines, doing bee Utey's conversion solved the problem.

Gave it a clean and it seemed to improve the issue but not solve it. I think I may need to replace it because there was still a build up of black stuff which I could not get rid of with the cleaner. Thanks again.
