I've just put 31x10.5x15 muddies on my stock disco and (as expected) they tend to scrape the guards over the rough stuff.
I'm keen to put a lift kit on it, but I only have about 1" clearance in the carpark at work.
Is there an air-adjustable lift-kit that might solve my problems?
Or any other ideas?

If you use your car off road and use all articulation, then longer springs make no difference as the bumpstop is the upward limit of suspension travel.

To prevent hitting guards the tyres you need to chop your guards, and or install a body lift.
I am not familair with 31s as AFAIK few people do this as they generall y have a low (illegal) load rating. The most common 31 is a 245.75X16 and to fit to a Disco you only have to chop the very bottom from the rear arch in a triangle. A body lift of 1 inch is enough for these tyres but I do not know about 15 inch flotations.
