What's the best workshop manual to buy? What's the best manual to attempt to buy? I've got a series 1 with a (non original) 2 1/4 motor so I'm possibly looking at two of the things. I also work for a library supply firm so if it's in print, I can get it... which doesn't work for books out of print. I WILL be looking at a full engine rebuild but other manual help would be good as well.

The best workshop manual, in my view, is the factory one. Since you have a 2.25 engine, as you suggest, you also need the Series 2/2a or 3 manual as well. The parts book is also very useful, not just for identifying parts, but because it shows pictures of almost every part and how they go together.
The simplest and probably cheapest source is to go to the top bar on this page and click on "shop". This will also help support the forum.
Other manuals, such as restoration manuals tend to be more useful if you are trying for a perfect restoration, and ones such as Haynes have little to recommend them compared to the factory one. 
Be aware that, particularly with Haynes, some of the statements and specifications will not apply to Australian vehicles, although this is less the case for the Series 1.
