Have experience with air staying on either fresh or recirc - but not the rest.
In my case the little sealed servo motor up near the glove box began playing up - it is fully sealed but can be pulled apart and glued back together - inside there is a little motor that drives cogs and levers - the cogs can become detached form the levers - easily fixed bit fiddley and often doesn't work the first time.
If all the other functions you mentioned are not working - sounds like a prince of darkness issues rather than the mechnical one I mentioned.

I had a similar problem some time ago that sounds like yours.
I had no blower fans working infront of the radiator, no fan speed control and the engine temp switch that turns the blowers on when your engine get to hot had no power.
Mine is on 200tdi disco so I don't know if this helps.
Mine has a little slide switch that control the fan.
The power for all the things above seems to be contrled throung the fan and the a/c heater select switch.
What I did was wire up a direct feed wire with fuse and three relays.
The relays were conected to the three oulets from the fanspeed switch inorder to take the load of the internal ac fans off the switch.
I had to replace the fanswitch at the same time as the load of the blowers internal fan on the a/c was to high for the switch.
The hand book gives wornings about useing the a/c with the windowsopen would cause componant falure
In you want a drawing of what I did I could scan it in and email it to you.

Not sure if this is relevant or not - but the fan on my Disco 1 stops for up to 2 minutes when the A/C is on full and it is a real hot day - there is obviously some sort of cutout - I assume to stop the A/C matric from freezing so the a/c switches itself off to defrost - it automatically comes on. Maybe the sensor that does this is playing up in your car and stopping the fan from working.
Just a thought

Wish I could help here, but I can only do a 'life experience' dissertation.
Currently, I have my D1 dash in bits due to the heater exploding. In a past life I fixed things electircal and no matter how small, the story was to find anything burnt or damaged, or disconnected or corroded. 12vdc electrics are simple, look for sus wires. In order to troubleshoot the prob, correctly earth the device and then hook it to a battery directly. If it runs up there is a further connection prob, if it doesn't the device is sus. There's no big drama with 12v electrics and sensors are the same; that is; they sense and if they don't they're either buggered or clogged, therefore bypass, temporarily.
get the drift? I'm sure you do. Having spent time in my dash, with wiring the hardest part of the issue is correctly locating which wire is responsible for its job and ensuring it supplies correct voltage, and all terminals must be perfect.
Grubby connections and clogged sensors cause no end of probs, but once isolated and cleaned, no drama in my experiences. Just need time and patience.
Got an air hose? Blow out a few suspects.
Awaitng report,

But I know where you're coming from and its a pig of a job.
