I have seen this done and now tried for myself. Fits better than I hoped. The seat mounting bolts to be adapted for tie downs.
Does anyone know where I can source a tie down plate with a bolt hole for the original bolts. I had something like this in the tray of a Holden ute I owned. Alternatively can adapt an eye bolt.
A space saver if you don't need 3 back seats.

The middle seat is surprisingly heavy.

outside seats are heavy too - I removed my drivers side seat to make access to the 3rd row easier for my 2 oldest kids. Youngest 2 where still in rear facing child restraints, but now my second youngest has outgrown his rear facing seat so I might have to have a look at shuffling the arrangment around again.

One option would be to use a piece of form ply or similar with holes for the bolts (or longer replacements.
Eye bolts may be the go if you do not need to provide an additional level surface for the fridge to sit on.

Just to close this subject. I could not find a local supplier in Perth CBD for the preferred tie down plate to buy quick. Thanks to David l00kin4 who sourced the exact part BP25 from juststraps.com.au for others looking.
In the end I found M10 eye bolts at Bunnings for $1.85 that do the job. I went for the inner fixings at rear to provide an end stop. The forward fixings are wider than my fridge.
