Hello
I picked up my new old Perentie yesterday and am just sort of working over it. Now I am a complete novice and I was attracted to the vehicle as I think it will be fun to use but also my daughter is keen on engineering so reports I read say these vehicles are dead simple mechanically.
I have a few initial queries (probably terrible rookie questions but I have to start somewhere) and would appreciate any input.
1. What tool or key is used to open the in panel storage
2. The vehicle has no jack - any recommendations for a suitable replacement.

Welcome to the forum Smithy :) .
The mechanical side of a LR 110 IS old school and quite "sort of" straightforward for the amateur mechanic - but also be aware that being 4WD there is a substantial increase in maintenance effort. Parts and useful advice are readily available, and friendly helpful specialist mechanics are around and can be recommended if necessary.
There is a tapered square key (standard LR part no) for keyed lockers which should be in a fabric holder on the front wall of the seat base (if it hasn't been lost) but in an emergency a large screwdriver with a large flat blade that will fit the square lock shaft will do.
Probably the best jack (if yours is not in the locker) will be a 4 to 5 ton hydraulic bottle jack with two extensions. Ensure that it has a grooved seat that can be safely put under an axle - and of course, never get under a vehicle solely supported by any jack. If the timber basepad for the jack is not in the locker it is a useful item to acquire.
If you have the wheelbrace (27mm wheel nut size), it is also used to lower the spare wheel from its storage via a hole on the rear side panel on the passenger side. If it is also missing just use a socket with a bar & extension (1/2" drive should be adequate), individual 27mm sockets can be purchased from tool shops.

In addition to what Mr County offered;
The lockers use what is commonly referred to as a 'budget' key. This is the same item as used on older rail carriages. A 10mm round bar, bent into an 'l' shape and square tapered down to 8mm will do the trick.
I second the recommendation for the 2-stage bottle jack. Please never be tempted to use a Hilift/ Wallaby jack for tyre changing. Too unstable and lifts the vehicle way too high for safety.
The 'Perentie' Land rovers are considered to be the toughest Land Rover that Land Rover ever made, but they are not unbreakable. Drive it like a LR not a Patrol/ Cruiser and enjoy the closer interaction with the world around you.
yes, they are very simple, only 2 electrical (no electronics) switches that could stop you from proceeding.

Best advise is to read though the perentie section on this forum and then ask about anything you don't understand
They are really great vehicles and this is a really great place to solve any problems

So the rookie fun continues - was driving at dusk and left the lights on - no alarm to say light left on :). anyway, any tips on jump starting?

No different to any car except you don't have any electronics to worry about.
Just be careful the pos cable doesn't touch the set box.
Let the other car pump some charge in for a little while before you try to start.
Are you able to roll start it??
Either way the battery would appreciate a good charge with a multi stage charger.

Doesn't take much to start them by roll start in 4th down a slight incline. Remember to only engage the clutch briefly.

if your battery is dead you won't have power for the edic to open the fuel supply

Correct, but it is easy to wire it in the open position with a cable tie if there is not enough power left in the battery to open it.

Its been growing slowly since Aug 2014 (a month before I got my Perentie) - its the third line on the forum's perentie page:

It is extensive. Every month it grows. Did they have a similar educational or info update system in the ADF from 87 to 2014? Anything other than offical stuff such as EMEIs?
