Hi, promise last question on this problem
The td5 defender needs a new head, I've been quoted $4500 for new aftermarket head, new filters, gaskets, bolts, oil, coolant. Drive in on Tuesday drive out on Thursday. 
In everyone's  experience  is this a ok price- $4500

I'd say not bad.
The AMC head seems to be quite an expensive item just on it's own!
eg. if you look at the price from Turner in the UK for an AMC head, they want near on AU$2500. 
For that head to be in Aus, then $3K is not an unreasonable price to expect .. then add all the additional costs of the job(gaskets/bolts/oils/etc) add in at least $1500 as compensation for the mechanics time and effort .. $4500 sounds about right. 
As long as they can be trusted to do a good job of it!!

if they are competent this is a good price.
Make sure they dont use the old head bolts as you will be doing it all again in 12 months
Also I insist they use OAT coolant as the last time someone didnt it stuffed everything and cost me over $7k
Also make sure they use genuine injector O rings and washers
