Hi Guys
I cooked a Salmon from Esperance for dinner tonite.Used my Derby mates secret Barra recipe.
It was absoulutely beautiful.
I will pass the recipe on but will have to kill you if you read it.
Its quite hot/spicy but if you like that read on.
1 big enough Salmon
600ml cream
2 hot chillis
2 cloves garlic
2 onions
1 capsicum
Curry powder
Crunchy peanut paste
Rice to serve with.
Dice the onion/garlic/chilli/capsicum and fry in oil with a slurp of curry powder.
Once onions are cooked add 3 dessert spoons of peanut paste and the cream.Simmer till thickened then add the Salmon(filleted,skinned and chopped up) simmer for a further 10 mins until fish is cooked and serve over rice.
This will work with most fish,Salmon is a strong flavoured fish,the missus doesent like strong fish,but the Salmon cooked this way was perfect,she loved it.
