That story has a link to another story which says there will be a single cab Defender, so who knows? I think it would be surprising if there wasn't a ute Defender. It's such a part of the Defender heritage.

You can make a monocoque ute work to a point, but you need to limit the carrying capacity and GCM.
It becomes light duty, an SUV ute, not a work ute.
