Got this one done over the weekend. It's a 2008, but it's the same screen & setup for the 2005-2009s.
With the exception being the 2005MY, which have some minor wiring differences, and will need the AUX input enabled in the CCF.
Until now the supplier of the kit hadn't been able to get the steering wheel controls working, I've got that sorted now.

Rear Seat Entertainment still working, and as you can see there's a video feed from the CarPlay box to the RSE, using one of the AV inputs, so with the screen mirroring you could play videos from your phone, on the rear screens.

Pretty happy with this. Yeah the widescreens look better, but this way the RSE & 4x4i & VentureCam still work.
