i'm buying another disco on the weekend that has had a front end smash so...
...i was maybe thinking - buy it, put the v8 and interior in out of the spare disco, throw some cash at it - tidying it up and putting some mods on it and bob's your aunties uncle.
but what is it worth

A V8 County is what you should be looking for.

G'day Taff :)
That looks like a Stage 1 Leaf Sprung Series 3 with the LT-95 G/box, and a very interesting Aircon mount:) probably work quite well there but a bu**er to lift the Bonnet;) could be anywhere from 2K to 5K+

as i said i've had my heart set on 1 for a while now but none have come up for sale over this way - that i know of anyway
and this is the nearest thing i've found.
but i was thinking that seeing as i'm buying a spare disco 1 i could turn it in to what i want albeit with a lot of cash thrown at it - but while i've got claire onside i've got to stike pretty soon before she decides she needs something better to spend MY cash on

I'd agree with UncleHo on the price, though based on the photos I'd go toward the lower end of the range, unless you have a particular love of the Chev (and is sounds like you don't).
I'd suggest waiting unless you really want leaf springs. You'd get an unmolested County for the same sort of money, with power steer, coils etc. Even an unmolested Stage 1 would be better value imho.

is that a hard thing to change?
if i take this on it'll be my first ever project though i beleive i'm handy (used to be a structures engineer in airforce) - will it be out of my reach?

....
That is not a Defender - its a Series 3 Stage 1, and a much messed about one of them. Stage 1 Landrovers were never common, and are becoming quite rare, but as with any rare vehicle, originality is the key to value, and although the modifications mean this is pretty unique, I doubt it is worth anywhere near the "buy it now" price.
Defenders have never been sold in Australia with a V8 - their predecessor the 110 was, and as with most cars with a V8 currently, their prices are quite low, although there are not that many around either. $5000 should see a very good one, at least five years newer than that one.

This is a Stage 1 = V8 Series 3. The running gear will almost certainly be factory Stage 1 NOT Range Rover (there are some subtle differences, esp in the front axle).
If you think of it as a Series Land Rover, basic design apx 1950, and you are happy with that, go for it, but offer 1/2 or less what he's asking.
If you want a Defender (basic design apx 1980) then wait for one.
I've had a V8 coiler and V8 leaf-sprung and experience is chalk and cheese, even though they were built 4 years apart.

The short answer is "yes"
It is possible, but the price of a used 110/County doesn't justify the trouble and expense. Just wait, something will come up. Or buy interstate and ship - that would still be cheaper than trying to adapt a leaf-sprung landy into a coiler.

G'day Taff :)
The Stage 1 was the last of the Leaf Sprung Series 3's in Australia, these were replaced with the all new chassised 110 Coil sprung vehicles, in 3.5 V8 and 3.9 Izusu Diesel (Australia only) we never had the 2.5 Petrol or Diesel, the Defender from 1990/91 was only available in Diesel 200/300TDI with TD5 later in 99:)
The Factory Air Conditioning (built in) was next to useless in Australia, but the Aftermarket under dash fitting with opening vents was much better. IMHO the Izusu powered Diesels were the best version of the Landrover 110.
Hope that helps.

Out of curiosity, what is the difference between a 110 and a 110 county?

The official model name for what is now known as the Defender was originally the 110 or "One Ten." The cloth-trim interior was (and is still in the UK) "County" specification. All 110 wagons were sold with County spec, which included "County" stickers down the side, so that's what most people recall. The utes were sold with base vinyl interiors and so were simply 110's. The name was changed from One Ten to Defender at the time the Discovery was introduced.
