What do you use or have been recommended to use and why?

Penrite now with factory oil filter.
Change every 7000k's. Cause its good, I get a 10W50 and motor has good oil pressure and engine runs cool. Not as cool as with 100% Synthetic but since I change oil so often, it does not really matter.

Pennzoil Diamond 15w40 (Rated SJ AND CH, use this in Tdi's too)

Just got a new set of filters yesterday, will give it a once over this weekend as I'm fitting new oil cooler hoses at the same time.

Penrite i think it 40W. My lifters rattle a bit when hot and offroad so was recommended to try the thicker oil.;)

I use Mobil/Repco oil in the Tdi with a repco filter . Have always used mobil and not about to change :);)

HRT use this and i have seen many malfuncsions on them Bloody crap oil

We've been sponsered by Castrol for the past three years so had many variants of lubes at our disposal for free. Even with the expensive synthetics we found that the 20w-50 was more than adequate even under extreme heat conditions for the rover V8. Change it every 5k with a new filter and you'll get plenty of miles from your engine.
We have oil analysis done every so often which tells you alot about whats going on inside the engine and also with the fuelling system.
The 4.6 racer used 20w-50 instead of the fully synthetic....no problems with lubes.
The new Buggy has a Honda V6 which we use the Top of the Range Castrol Edge fully synthetic...so far we've blown one engine...but to be fair that was due to mapping issues and probably not the oil.
I have started to use a Filter magnet as well to capture the smallest of metal particles that still manage to float around inside the block.
You'd be surprised at how much it captures!
I run 20w-50 on my current 4.6 and in the previous high performance Rover V8's as well. Sometimes the temperature guage was up to the 110 degrees mark but it kept powering on. Just be sure it's a trusted brand and not something unheard of.
