help wanted with last minute trip

first of all hello to all here. it's been so long scince ive been here i had to sign up again :o .
anyway i'm after some help planing a trip.
i am going to a work conference in sydney at the end of next month and as a result thought it would be a good time to pack up the family and drive up.
well we are driving that far so thought we might as well come back the LONG way :D .
so what im after is any info, sugestions or thoughts anyone has.
the trip starting in sydney then heading to dubbo - broken hill (inc. wilcannia and white cliffs) - port augusta - coober pedy / lake eyre - port augusta - adelaide - mt gambier - apollo bay - port melbourne - hobart.

any help with camp sites, things to see or do would be great.

departing sydney on sunday 21st june and need to be at port melbourne saturday 4th july

Dubbo - Western Plains Zoo. I can probably supply a camping spot (no facilities) about 60km out of Dubbo.

Near Port Augusta - Wilmington Toy Museum.
