Just had another culinary triumph:p

...No I didn't burn the kitchen, slow baked a Beautiful veal rack, 2 hours all up at 160. Start off covered, 1 cup of a good cab sav, some Thyme ,salt and pepper. Uncovered after 1.5hrs and then 35 mins basting regularly at 175. Rack weighed just under a Kg.

Pan juices became a reduced thick gravy with a hint of red wine. Served with Brussel sprouts, sweet potato and carrots.

JC, that sounds almost edible ;), only one mistake, you spoiled it by putting brussel sprouts with it.:o:o

Looking forward to our next culinary delight which will be a kangaroo vindaloo next Saturday night.........complete with Chateau Cardboard of choice, of course.:D

Sorry Numpty, I must disagree, the sprouts would have topped off a wonderful feed:)
Onya Justin, made my curried rice and salmon look a bit sad. I got a bit heavy handed with the spices, yummy but I'm afraid if I belch it will start a bushfire.:angel:

If I can find another couple of these little racks we should do it in the next couple of saturdays? Works out cheaper than Rump and I reckon a better result:cool: Got a haunch of Venison still in the freezer, time for an experiment in slow baking with crusty coatings...:DBesides I think your oven is bigger than ours!

Hi Arthur and Rosa!

No Tassie red, a bottle of 2005 Killerby Cab Sav from Margaret river WA. Just joined a wine club and this along with many other fantastic bottles was in the first delivery:D I also discovered a guy I went to school with is Senior winemaker at Naturaliste Vintners WA, one of his wines is in the box...:) Gonna try it with the venison....:cool:

My wife cooked some Kangaroo fillets last night - superb!. Washed down with some cheap, but quafable* Shiraz. Loverrrrly.:ohyes:

Yes, I was reluctant to say "cheap" becuase it was bloody good - especially at $6 per litre ,............ok it is cheap :( but it was bloody quality cheap wine. :lol2:

I just finished a Rump steak seasoned and seared in Paprika and mixed herbs, it was then topped with grilled cheddar, eggplant, garlic and olives. Chicken kebabs marinated in Plum sauce. Sides were homemade Caesar and pasta salads, Garlic and eggplant bread.

No grog tonight, cause 1 is never enough.

Mate, I am all in favour of eating roos. If we replaced sheep and cattle with roos and emus the country would be in a better shape - not mention the health of the consumers.

2 big fillet of roo for $8 - bloody cheap too. (OK I see a theme here - cheap booze, cheap food....:lol2:)
