I'm currently looking at creating a new dash module complete with Digital Display. Now on this digital display I am looking to put:

-Temperature Readings
-Internal, External
-Fridge upper and lower

-Battery Level
-Main
-Auxilary

-Fuel level (my gauge shows empty with 60l left)

I've borrowed my friends Arduino to play around with. The Arduino is an open source programmable PLC you can plug in via USB.

Any other ideas on parameters i can keep an eye on with it???

I have a 2000 TD5 Defender

I'd have a look at the bascom site - Home - MCS Electronics (http://www.mcselec.com/)

IMO much better software for the Arduino unit or any of the other atmel avr development boards out there. For what you want to do there are much better options.

The bascom avr has excellect suppport for lcd displays - and it's all done in a BASIC style language. Real easy to pick up.

Sounds great!
How about using 100A shunts and reading charge/discharge current for main/aux batteries?
