    Camp Recipes

    A place for us regular campers who want to share our recipes

    Please keep chatter to a minimum.

    Lemonade Scones

    3cups SR Flour
    1 cup Lemonade
    1 cup Long Life cream

    Mix all together, roll into balls and place in cake tin..
    Place into camp oven/cobb for about 20mins approx..not too hot

    Serve with jam and cream

    Mrs. Hohar, just go on a droving trip. Learn to cook rib bones on the coals, damper, johnny cakes, make and cook your own salt beef and mutton, curries for when the meat is getting a bit rank, kill and dress your own fat wethers and bullocks, preferably someone else's. Or did you mean some other more comfortable style of camp cooking?

    Real simple fruit cake that even I can make.
    Zap down to the local supermarket and purchase;
    1 Kg of mixed fruit,
    1 x 600 ml of chocolate milk (You can replace this with the same amount of cold tea, pineapple juice, orange juice or whatever flavour takes your fancy),
    and 2 cups of Self Raising flour.
    Soak the mixed fruit in the flavoured milk ( or whatever) overnight.
    The following day stir in the flour, place in a cake tin, or something similar, and cook at 160 degrees for one hour.
    Tastes good.

    baked ham

    always looking for something different in the camp oven

    this weekend i thought i would try a baked/glazed/pickled/roasted ham......what is the correct name??

    anyways this is it

    1 cup apricot nector
    ¼ cup brown sugar
    1 teasp Dijon mustard
    ¼ cup orange juice
    ½ cup apricot jam
    Mix all in together, heat through till jam has melted

    Then glaze ham.
    Put more glaze on ham during cooking
    Bake for about 1 hour
    Happy cooking

    turned out a treat................only problem was, camera batteries were flat

    Woolworths sell a pack of marinated chicken pieces (thighs, legs and wings)

    40 mins in a pre warmed camp oven......delicious. I usually do steamed vegies to accompany.

    Sounds nice Perry.

    I've been doing the small (about 1kg) rolled and marinated roasts lately - also available from Coles and/or Woolies. Quite nice for two to four people and only take about an hour or so to cook. If only serving two, there's usually some nice cold meat for lunch the next day.

    I have used those small roasts in the past too Roger. They're good value for 2 people.

    A regular dish for us is Chicken Fajita's.

    Cut up 1 pack (approx 700g - 1kg) of chicken thighs into bite sized pieces.
    Fry with a bit of oil, until cooked through.
    Add 1 red or green capsicum sliced
    Add 1 packet of Fajita mix, and stir through. Cook until capsicum is tender.

    Place mixture in middle of flour tortilla, along with some cheese, salsa, and sour cream, and roll up. Other salad can be added if wanted.

    Great for the kids, as they like to make their own.

    Sticky Date Pudding in a Camp Oven

    I stumbled across a recipe for Sticky Date Pudding which was prepared in a mug and microwaved. Having tried it four times in the last month in the microwave, I had an opportunity this week to test it in the camp oven.

    As with the Chocolate Mug Cake, it doesn't rise as much in a camp oven as it does in the microwave, but the taste is the same.

    I haven't bothered with the walnuts or the caramel sauce. I have it with custard.

    The recipe calls for half an egg. I have tried three different solutions to the problem of having half an egg left over and they all work.
    1. Make two at a time.
    2. Use the other half to make custard.
    3. Just use the whole egg. It doesn't seem to make any difference.

    There are several other mug recipes here.

    I would expect most of them would work in the camp oven.
