    smokin!

    anyone into using a smoker to do meat ribs or fish?

    got any tips?

    i just picked up one of these

    Grill Smoker BBQ

    only cost me $70 and i have always wanted to try smoking a roast and ribs so the journey begins

    got some cherry wood chunks coming as it is supposed to be good for beef pork ribs sausages and chicken.

    making myself hungry talking about it

    I have one similar plus a gas smoker from aldi.

    Gas is a lot more conenient though.

    No 1 tip. Find some good lump charcoal. Do not use heat beads.
    2 put a tray of water in the smoker.
    3 start early, low and slow.

    Go to your butcher and buy a full pork belly and get him to brine pump it.

    Have him cut the ribs out as they will cook quickly.

    Put them in your smoker and after3-4 hours remove ribs and enjoy with beer while ghe pork belly smokes away.

    Keep the temp between 80 and 120 and you can leave in there for 8 to 12 hours if you wish.

    And if you use charcoal it is safe to top up without going through the lighting up ritual of the beads.

    finally got the chance to do a roast in it..

    1kg topside roast, lump charcoal, cherry wood and old convict rub..

    pleased as punch with the results.

    didn't think i would get it done as well as i did on the first try..

    beginners luck i suppose..
