We've got one of the smaller hillbilly ones. Have had it for about 6 years and very happy. We've got the extension ring with it that gives it a bit more height and we use every time for roasting and IMO its a critical part of it. Easily holds enough food for 4 adults.
Mainly use it for roasts and stews, but do the occasional cake/damper.
Roasts are always done on the trivet (sp?), and we do most of roasts at home in it, on top of a home made "Ozpig" inspired appliance. Heat beads work well on top of the lid in lieu of having good coals from a larger fire.
We've also got the vege ring, which we don't often use as SWMBO reckons the veges come out more steamed than roasted (she prefers baked in foil or sliced in the frypan with herbs etc - I just nod, agree, and eat
)
For us, I feel the large hillbilly is too big, but the small one with the extension ring is perfect (would be bordering on too small without it).
Ours fits in the canvas bag OK, but it is a reasonably neat fit.
