Have fond memories of my Mum's P & H soup. Haven't tried to do that one but I have come up with my own Potato Leek and Bacon soup recipe which I am happy to share here.
Ray’s Potato, Leek and Bacon Soup
Ingredients
2 Leeks
800g (approx.) Potatoes (no more than about 1kg)
1 small Brown Onion (half large one)
Olive Oil
Handful of diced Bacon Pieces
Smoked Paprika (or just regular Paprika)
4 cups Vegetable Stock (one of those 1L brick things from supermarket)
200mls (approx.) Thickened Cream
Method
Top and tail Leeks cut in half length ways and wash inside under running water.
Finely chop onion and leeks, cube potatoes.
In a large(ish) saucepan place about 1 Tbsp of Olive Oil and heat, add onion and leek stir, sweat until limp (the leek and onion, not you). Add Paprika approx. ½ - 1 tsp or to taste. Stir.
Add potatoes and stock and bring to boil remove lid and allow to boil and reduce slightly stirring occasionally until potatoes are soft when stabbed. Add half of your Bacon Pieces, stir.
Remove from heat and using a stick mixer blend until there are no lumps and it has a smooth texture. Add cream and stir making sure cream does not separate. If you don’t have a stick mixer you can do small portions in a blender until completed, return to pot to add cream.
Add remaining Bacon Pieces and stir. Just like croutons only meaty.
Enjoy. Garnish if you wish.
Serves 4. I think. Or maybe 5.
