If you're not a stickler for total originality...........
2 door from 72 to 84, uprated engine (350 Chev for example), Ritters C4 / 9 LT95 conversion, EL thermos, LPG for frugality. (Just like mine :D )
Benefits are strength, very cost effective maintenance and running, and no electronics.
If you're needing to use the back seat a lot a 2 door can be a PITA. 4 door with the above would be my pick. They are all classics, getting more complex through the timeline.
