The EAS system in the classics has a dessicant canister that is optimistically intended to dry the air before it gets to the valve block. Not going to be doing much 25 years down the track.
Question
Does it occur that the EAS air tank collects water, or does the classic use the same/similar venting system as the later cars?

Long long time since I messed with one of those but I don't recall any other form of moisture control in the system, also don't recall whether the dessicant is before or after the tank. I seem to recollect that you could replace the dessicant pack in the canister or perhaps the cannister was replaced as a whole.
I think there was a bung in the bottom of the air tank, you might be able to put a valve in there that could be manually operated to drain water like on truck air brake tanks? Even a schraeder valve would probably do the job.
