What MBP has drives that big????
You can back it up using time machine in the OSX.
We may need around 6-8TB, so 4x2TB drives.
what OS would I use? some version of Linux?
I know nothing about Macs,, but the system will be only used as bulk storage.

I have no idea Mike.. the size was an estimate of storage required over a year or two,, it will be mainly video.

I think they are using a NAS for networking between macbooks, and redundancy,, this will be sorta like off-site storage.

A 4tb NAS will do fine.
Use time machine to back up the MBP to it, and save other files directly to it.
No other OS required.

I use Amazon S3 (Amazon Simple Storage Service) buckets to backup my Linux box. Doesn't matter if its OSX. Just use an S3 client to sync the files to AWS. Only the changed files are copied across so the first sync is slow but subsequent one are quick. Amazon Simple Storage Service (S3) And it stores snapshots also.
AWS cost for me is about US$ 5 per month for my 155 GB. Have a look at their costs page. Ingress is just about free. Egress is what they charge more for.
If you use 2TB drives what backs up that drive? One lightening strike or brownout could damage your PC and any connected device. Or if you get a maleficent virus you could get your stuff encrypted. How many snapshots does the TB drive do? Is there a daily and a weekly?
Where do you store them? Next to the PC where they will get nicked with the PC?
Best practice is TB drives for the onsite backup and an offsite backup like AWS or rsync.net (I use the later also)

its complicated, any true off site backup would have to be via satellite..

use superduper to an external hard drive. save an image or clone the drive to the external
time machine has issues getting a decent booting restore on occasions
superduper will clone the drive to an image or external hdd you can get back from without any real issues.
i use it to back up all my macs
