assuming the example you gave (i.e. no other software/tech involved), all the "BT dongles" should show up on your phone by name (as a discoverable device). If all of your dongles are the same I would imagine it would be very difficult to identify which TV a particular dongle is plugged into. You can give the BT device (the dongle) a new name on your phone(an alias). if you were to do this for each one, you would then be able to differentiate between them.
The phone would usually be used to govern permission for the connection but, seeing as you would be initiating the connection from the phone permission is essentially granted then anyway.

OK, so you are wanting to mirror the TV on your phone. That's not usually the way it works. Normally your phone is the source and your TV the output. To do the reverse, you would need some software installed on both the TV and the phone. You wouldn't necessarily need BT to accomplish that as long as your TVs and phone are connected to the same network (eg home WIFI).
Here's an example that uses WIFI:
...not sure I would trust it though.
PS you originally mention connecting via BT but now talking WIFI...two different things as I'm sure you know.

Obviously if your equipment is capable of it you could do like the above.
Going back to your original question of "how do you know which one", you'll have to plug your BT devices in one at a time (like Eevo said) and rename them with something meaningful as per the instructions I posted earlier. Then you can continue on your merry way.
