the thermostat opens at 88 degrees, so those figures seem about right, if it got up to and over 100 i would start to be concerned

What's your temp
Those temps are right for both circumstances. That's where mine runs. After a lot of trial and error and research I have set the alarm at 110 degrees as a warning but have been assured it can go above that with safety.

I have a 97 3.9 on LPG and a TM2 and a VDO guage. The VDO ranges between 69 where it sits most of the time and 75 and the TM2 ranges between 76 where it sits most of the time and 84.I also have an 82 degree thermostat which I will change to an 88 degree soon as the engine is running a little cool I think.I wouldn't be concerned about the TM2 getting up to 100 degrees.

Yep that sounds about right to me. I have a 4.6 fitted to mine and it is pretty much the same - I also fitted the sender under the thermostat housing bolt.
