Have just checked again without thermostat and there is no bubbles in the expansion tank when idling or revving engine.

Checked the front thermo type fans (Im guessing they are the viscous fans your talking about) the drivers side one spins when revving engine abit but the passenger side requires quite alot of revving before it starts to turn.
So maybe the passenger side is faulty or maybe it needs the engine to be warm before it operates.

As loanrangie said above, the 2 fans at the front are not the viscous fan. The 2 fans are the air con condenser fans, although they will also come on if the engine is overheating. They are really just for the air con though. The viscous fan is the other side of the radiator. It is bolted to a pulley on the front of the engine and runs mechanically.

If you've removed the thermostat, what happens if you heat it in water on the stove? That's the easiest way to test it. They are also cheap to replace, so I would replace it now anyway since it's out.

I think you'll find the twin circular fans are electric and the viscous fan is in front of the engine which drives it and behind the radiator.
My electric fans come on when the aircon is on.

Would the coolant/water ratio effect the over heating problem noticeably as currently I think I am starting to get more water than coolant in tank and still have issues.
I have just gone out to get more coolant but noticed once I get up and sort around 100km for 10 minutes our so needle starts rising further. Sitting about 80km seems fine with needle sitting only slightly higher than it used to at halfway.
Thermo stat is currently removed but engine was operating temp in about 5 minutes which I thought was probably a little quick.

To be perfectly honest, I can't believe you're still driving it, particularly up to 100km/h. You are almost certainly destroying the engine. If it wasn't before, the head gasket is now blown and you'll possibly need a new head as well.

Shouldn't matter running 100% water, as long as the system is pressurising. Which I guess is another possibility... You could try a new cap on the expansion tank. It has a pressure release value in it rated at 15psi. If this is broken (jammed open) and not letting the system pressurise you will have these problems.

P.S. the other thing to know about your temp gauge is that it's "normalised". I don't know the exact figures, but roughly, the gauge will sit at half way with a temp between 80*C - 115*C. If the needle goes above half way, you have gone past 115*C which unfortunately means the engine has already overheated and you are doing damage to the engine. Driving it with the needle above half way is crazy.

Yep, once that needle has moved off the middle position get your wallet ready. I reckon you will find either gasket gone or head cracked and probably both, new head replacement is an easy job and about $1200 all up including all hoses, t-stat,coolant,oil etc.
