A few comments without making your decision for you!
The Disco
* Last of the Disco1 with the 'modern face' is a good-looking car;
* Adoptive daughter has one; her partner was a bit brutal with it and damaged the manual gearbox (so maybe that needs to be looked into)
* Brother-in-law had a TD5 and it was good for a long time, but became uneconomic to repair for a main use of 2-tonne-towing
* There were problems with the first Discos in that the gearbox was 'perfect when new but aged into problems'
* 300tdi is a fairly mild motor - a steady purr will get you anywhere(!) slowly/reasonably and nowhere much really fast
* Depending where and how you get them, parts for any Land Rover can be expensive. I recently got a part shipped out from England, even with (accidentally!) fast delivery, it was cheaper than in-stock at the local organised crime unit called a dealer.
Others with direct experience of the Disco 1 have commented at length and I commend their advice to you.
the Pajero
* I recently had one (a diesel loaner while bodyworks were done, a recent model)
* By the time I reached the first corner 200m away I'd 'decided not to buy one' just on cabin noise.
* I found it heavy, thirsty, slow (and that's the diesel)
* Very dated - a 5-speed box?
* undoubtedly sturdy and capable for the Aussie outback
* Clearance not so good for really rough stuff
* they've ceased production, I think.
* A petrol one would be very thirsty
* Getting back into my base-model Freelander2 TD4 - which is no sports car! - the Freelander felt so responsive and nimble!
* I imagine spares would be cheaper and easier to come by
My guess is the Disco would be both more of a pain and more of a joy. More spannering and more comfort and more off-road capability.
