I would be seriously looking at a set of 245/75R16's. The extra clearance is essential for the tracks around Sugy and north at Booral and ........ well everywhere.
I've had 245/75R16 maxxis bighorns on my 98 tdi disco for almost 12 mths now and there is no way I would go back to a smaller tyre. In fact my next set will be 235/85R16s just to get a little bit more clearance under the diffs.
Because tyres take a long time to wear, get the biggest ones (maintaining some sensibility, unless you want to start the angle grinder up and start shaping guards
) you can afford, you will be thankful for it later on.
From a personal point of view, I have been very happy with the 245/75 size of tyre and have not found a hugely detrimental affect on performance.
