What size battery is it as the second battery?????
Two holes in rear bumper. No idea, except that it would have to be very light as that raised section isn't capable of supporting much load. Possibly a work light used for extra light when reversing or camping in the bush.
Two switches in dash. Sorry again no idea, but possibly for spot lights and rear work light.
Extra battery. Probably used to run a fridge on camping trips. Cables are too small to have run a winch. Look to see if a battery isolation system is fitted - should be used if a fridge is to be powered for long intervals while the engine is not running (to avoid flattening the starting battery).
Two brackets below front bumper. These look like they are for a nudge bar. Definitely not strong enough for a winch or bull bar. There could have been spotlights mounted to the nudge bar.
Disconnected wires above pedals. Some are stock, probably for options that weren't fitted to the vehicle. Some have been added by a previous owner for something which has been removed.

Edit: BTW the coolant expansion tank is too full as someone else commented - unless the left side of vehicle was jacked up very high when the photo was taken.
umm..... what about air lift shockies for the rear? that would explain the 2 holes in the bumper, they look about the right size for the valve stem fitting

I am going for rear work light (as mentioned), and fog/spotties on a nudge bar (also, as mentioned).
Same opinion as Bush65 on the bits and pieces.
Again - check out the cooling system pronto! That coolant tank is way too full!
Also, the brake reservoir looks too full!?
Better also check the other fluids, they could all be too full!?
Unconnected things under the dash - every Disco has a few, they are usually for optional accessories, that you don't have.
It looks like you have a couple of extra wires as well: the white one looks to be a ground wire and the red bullet connector might be a positive,
both probably from something the last owner added and then removed when the car was sold.
