Also, if you havent run them on 8" then you wouldnt realise just how much they are wallowing around under the rims on 7" (tyre rolling side to side under the rim) this effects handling and cornering.
Pay particular attention to the picture above and how the sidewall is bulging out from the rim edge towards the tread. At lower pressures this tyre is far more likely to pop off the rim.
IMO the better tyre would be the 255/85/16 on the 7" rims. Less rolling resistance and cleaner fit.
Look at a Maxxis or new BFG...
Wide tyred looks tough, but the slightly narrower will be much more friendly on road and off.
