Offset is the distance from the centre of the rim either towards outside (positive offset) or the inside (negative offset).
The measurement you are talking about is the "back spacing"
All d2 16 and 18 rims are positive 57mm which means the centre of the rim is set 57mm towards the outside of the rim as measured from the centreline, and I'm pretty sure the 7" and 8" are all the same offset, the 8" just puts half inch inside and out.
265 tyres will just rub on standard rims, the inside rubs on the chassis rails, the steering stop can be adjusted to stop this.
Aftermarket rims with +35 approx will run 265 and 285 without rubbing, a lift required for the 285's.
