While removing the headlining trying to find a plastic knocking noise, I broke the foam thing that sits behind the headlining. So I remove all of them from the drivers side (LHD).
Is this somethinf that I have to replace or forget about it?

You may need / want to pass electrical wires to the rear of the vehicle at a later time (or someone else may wish to do so).
Clogging the whole volume with spray-in foam would not be helpful in that situation.

Got to be a bit careful with expanding foam and body panels. Fella I knew once had a toyota corolla, He reckoned the rear guard panels droned so he used the foam to fill voids. Did not factor in, A; how thin the panel work was, B; the foam expands in small spaces, The poor little toyo looked like a startled bullfrog around the rear end!!!!!Mind you, He said it never drummed anymore! And he drove it for quite a few years.
And yes Bohica's idea is a good 1.
