Out off-road yesterday on some easy tracks, going slightly up some rocky terrain and briefly loss complete throttle control. I vaguely remember at least the left half of the instrument cluster flashing at me (I do recall seeing the three amigos in the mix) whilst the engine was idling.
Hit the brake and waited a few seconds and everything resumed back to normal.
I had gone through a few shallow puddles and perhaps taken a few washboard tracks a little too fast if it adds to bigger picture.
Completely stumped as to what could have possibly caused this.

I'd be checking for fault codes with a nanocom to begin with and proceed from there

As noted, getting fault codes read will give you a direction to look.
It isn't uncommon for the accelerator pedals to fail.
