The torque converter lock up won't activate until the coolant is at 82 degrees C. Perhaps this is what you were thinking of.

Nope, but OP was talking about 3rd not top gear which is what I was thinking of. My auto doesn't lock up until about 80km in top.

Going back to the original post. I also think you should take it back to the auto specialist and explain your issue. Perhaps even take him for a drive, or let him take you for one. It could be as simple as the lockup switch was not connected correctly or something simple like that.
Also, you mentioned you have a low stall to maximize your bottom end torque to tow the caravan, but you didn't mention if you have a chip or tune. The std tune does not cope with the larger torque converter.
The TC is essentially like a turbo. The larger it is the longer it takes to spool, but it can be counter acted with a tune to give max performance as stated previously by Disco Muppet.
If you were convinced by the Auto Specialist to upgrade your TC without a performance tune, i'd argue that you are within your rights to return it for a standard TC at no charge or at least tune at no charge.
I'd suggest a std TC as Roverlord quite rightly put it, when you start changing things it can be Pandora's box, even Disco Muppet mentioned the higher EGT's then you need a EGT gauge ect. I also know from experience.
