The wheel track of off-road four wheel drive vehicles and goods vehicles (MC, NA, NB ADR category) must not be increased by more than 50mm beyond the maximum specified by the vehicle manufacturer for the particular model.
Given the standard for the Discovery 2 is ET57, then ET32 or 32mm positive (32P) is the ideal wheel offset to take advantage of the maximum wheel track while being fully compliant with the requirements.

No ideas, but the factory wheels are irrelevant when you need the additional track width (if you don't need this, then given the cheap price, high availability and excellent quality of the factory wheels you'd be silly to not stick with them). The spacers and hub adapters that would be required to run the factory wheels aren't legal and have other complications.
The EVO Corse wheels are commonly used in the Dakar Rally. I'd assume they've got their design setup well.
I've been rolling on the Dynamic Wheel Co steel wheels for almost a decade now and not had any issues with beads in my use. I don't know if they're bead depth is equal to the factory wheels but it's certainly sufficiently deep enough for purpose.
Are the factory wheels J type bead profile or JJ?
