One of my Engels is freezing no matter where I set the rotary switch to. I suspect the thermostat is cactus. I have removed said thermostat and have hooked a multimeter across the two terminals, it shows open circuit when sensor is at room temp and also in warm water.
I'm now seeking and would appreciate advice from the 'fridgies' on how to test it.

I may have misled you and apologise for my ignorance, the part that I tested and got the open circuit was as I've now discovered, the Thermister - Temperature Sensor.
The compressor does run and in fact the whole unit works very well, AS A DEEP FREEZE but will not operate as a fridge.
I imagine that the Thermister - Temperature Sensor should have a variable resistance with change in temperature. This unit had a number on it (202AT) and having found it online, I've gone ahead and ordered one.
I hope I'm heading in the right direction.

Mate A long shot not sure what model you have but some models have a small battery under top cover. If this goes flat the Thermostat plays up. Had the same issue up the Cape new battery good to go. it a watch type readily available bunnings / woolies.
If the Thermister doesn’t fix you can wire in a thermostat using the 12v feed to turn fridge on and off….
If you fridge is older style now you will be able to dial an exact temp like all modern fridges.
You may be able to find out what resistence the thermistor should read from somewhere,then you will know if its faulty or not.
Although they are usually pretty cheap,so no biggy if it doesnt work.
The actual controller may have its contacts welded shut which can cause the freezing issue as well.
See how you go.
