Tassie is brilliant and well worth visiting, been there about five or six times over the last six years, unfortunately usually for work though. The longest time we spent there was about two weeks a couple of years ago.
The real problem with Tassie is there are so many great places worth spending more than a couple of days at that you often don't get to see all the places you had hoped too in the time you have.
I second what Baz had to say about the west coast. Every chance I get I spend time in Strahan.

South of Devonport, to the House of Anvers Chocolate Factory
If you go to Strahan, the Sarah Island tour is well worth the money, the train to Queenstown and back.
In the Hobart area, the Lark Distillary and lunch on the docks, the Shot Tower, Mt Wellington, the Huon Valley, the Botanical Gardens, the Cadbury factory, Cascade Brewary tour:D
Bruny Island and Truganinis monument at Adventure Bay and Penguin watch (seasonal) but really anywhere on the Island is beautiful.
Up to St Helens, looking at Coles Bay and Freycinet then a stop in St Marys for pancakes at Mt Elephant pancake house:D
Hastings Caves, the hot springs in Hastings, Tahune air walk
Cradle Mountain
Dip Falls
The worst part about Tassie is leaving:(
Oh and don't forget the Boags brewary tour in Launceston;)

Your dog and his entourage, are welcome to drop in on the way through and camp at my place, with a nice grassy patch next to the Jordan river, a nice straight tree, maybe a rabbit to chase and only a 4Klm walk from Brighton and the Midlands Highway.

If time allows make sure you visit the Mona Museum / art gallery at Berriedale on the way into Hobart It is also a winery with good tucker. The museum will both shock and surprise, when I last there they had 200 ? or near, plaster casts of womans Virgina's all different and lots of other stuff thats ment to shock in the name of art. Its not really a place for kids or prudes .
Also check out the Sunday markets at Evandale just up the road from Launceston Airport
