here are some things to consider:
engine bay.
if its a TDI ask if the timing belt has been done within the last 80 odd thousand K's
check for oil leaks around the engine
check for diesel leaks from the injector pump, sometimes it can be difficult to get in there to check the underside, just wipe your hand around the pump and see if you have diesel.
and of course as about engine service history.
personally I like to see an engine that has not been washed and cleaned for the sale, also its nice to hear the engine from cold if possible.
underside.
at the very front of the engine on the underside you will see a hole about 10-12mm from memory, this is just behind the harmonic balancer(bottom belt pulley) check this for oil weeps.
moving back to the gearbox.
on the bottom of the gearbox bell housing you will see another of these holes, it may even have a 'wading plug'(small bolt) in it(if so, it shouldn't) check this hole for oil weeps, if you have oil coming from here then it is possible you have a rear main seal gone.
grab the prop and tail shafts and turn them back and forth(in gear with handbrake off) it is common to have about a 15degree play in these, anything more severe and it may be a sign that it has been 'flogged'
check for oil leaks that appear to be coming from between the gearbox and transfer case. if there is a leak from here then you may need to take the TF-case out and replace O-ring + seals.
the body.
check under the drivers and passengers side floors for rust, check around the inside of the back door(boot area) for rust and also check the top of the firewall in the engine bay(behind the water bottle and below the brake booster)
of course there are many other items but I think Ive picked some of the most 'expensive' to repair.
if you are serious about the vehicle it sometimes pays off to have a mechanic go over it before you hand over the cash, if they are reluctant to allow this I would be suspicious.
I guess the rest is up to you. aesthetics etc.. feel free to give me a call while you are going over the vehicle if you wish, I'll be happy to give some advice.

I once took a mate up the coast to look at a disco1 for sale, he wanted about $6500. by the end of the inspection he was offering it to us at $3500. it had backlash, rear main seal gone, timing belt was due, rust, faded paint, saggy suspension, bad tyres and the list went on.
we had a pen and a piece of paper and wrote down every detail, this is worth doing. the list can get quite large at times and if you start jotting avg prices for repairs next to them it gives you some room to haggle.
