    Justin, I do not have gluten intolerance but when I can I try to eat food that it is more nutritious than just white flour.
    Having said that I enjoy very much a good loaf of Italian or French bread
    We do our home made pasta with both, quinoa and plain flour and enjoy both of them. Today is quinoa pasta in the menu
    If you have a look the nutritious value of quinoa or amaranth you will see that it is not a bad idea to include them in your diet.

    I think you have the right idea - variation. I've always said, anything and everything in moderation. It's the high percentage of processed and gluten filled foods that mean a lot of diets lack some things and excessive amounts of others.

    For example, white bread toast for breakfast, white bread sandwich for lunch and plain pasta for dinner is far from moderation, but this could easily be an average diet for a lot of people.

    OzEmite is like vegemite and is gluten free. Macro make gluten free Corn Flakes, and if you don't want to eat gluten free bread try gluten free organic wraps by the Old Time Bakery.
