Saw a program a while back about software that can literally sort the sheep from the goats! Think it was Landline or something similar. Used for remotely trapping goats at watering points.

Hi,
It was a very controlled scene though, plain blue background, targets moving across the field of view as a fixed distance.
A good first step though.

In SA the oyster industry can optically sort shells dropping down a shute. It will all come together one day.
