You could interpret 4.2.2.1 to mean the cable shouldn't be there. It says -
'Electrical equipment shall not be installed in a position where it might cause a fire hazard'
You could interpret that as saying a cable during a fault event might cause a fire hazard, meaning that it shall not be installed there. Shall meaning mandatory in the reg book,

Gees.
I always believed power went straight up or down from a power point,NEVER across the wall.
In a previous life I was Contracts Supervisor for a gyprock mob,so saw plenty of wiring,good and bad whilst measuring jobs up.
Also saw a boss drive a Tek screw into a power wire with a cordless drill.Asked him what he thought he was doing,there was a power point below it.He had used a "stud finder",I don't think they know the difference between studs and power.
It was spectacular,the flash and it shutting all the computers down
Fortunately no injuries.

Then bath looks the same as every other bath I've seen installed - including mine. The installation of a bath isn't supposed to make renovation easy, so that's a moot point IMO. The gyprock runs over the edge, and along with the waterproofing that goes over that then the tile and the final caulking, there's no way water can get back last there into the frame but I'm no builder so happy to be corrected on that one.
Overall it seems like you do have some ammo to get them to slow down and look at what's going on.

First thing I would be doing, is sending the photos of the electrical work to the supervisor.
He probably hasn't seen it yet, so has no idea. It certainly isn't correct.
Do not let the guys installing the gyprock to start works until the supervisor has at very least replied.
As for the bath, looks to be a standard install. H3 treated for use in wet area, then they will clad with either fibre cement sheeting, or Aquacheck.
But, if that is not what you requested, and your contract states something different, then go for it.
