What about roughly following the Great Dividing Range north from Albury? Could look through Tumbarumba, Tumut, Burrunjuck, north to Hill End/Sofala via Abercrombie, Coolah Tops, Armidale and Guy Fawkes NP and then either join the hordes on the coast if the kids are sick of the bush or head home via the Newell or further west via Coonamble. Should be able to find some nice quiet spots and have coolish weather for camping.

If heading up big desert area maybe have a look at the camping spots on the Murray River. It's not NP along the river so dogs will be fine. Will still be hot but at least you can cool down in the river and it's not too far from some shops or even Mildura for some food if it's total fire ban

I'd second Tank's neck of the woods but if he's been there, done that then.....
Start at Gundagai and tour along the Murrumbidgee? Being ADF he may appreciate Hay war, prison and machinery museums.
Or Gundagai, over the mountains and along the Upper Murray via Talbingo, Tumbarumba, Jingellic etc?
Or the Shoalhaven around Nerriga, onto Braidwood, Cooma then the Snowy River along The Barry Way?
Or up around Turon and Macquarie rivers?
How good is camping![emoji106]

I agree with those who have suggested touring the inland rivers, such as the Murray. Lots of interesting towns and places and if it gets too hot just go swimming. Also cuts down the distance to travel from home. Kids and a dog OK.
We expect to be doing something on the NSW North Coast, but not at the beach, which is too crowded.

Inspired by a lyric from Banjo Patterson, "from Walget to the sea", we followed the Darling River from Walget to Wentworth and had a great time.
Lots of side trips worth doing as well.
